What a productive day! If only you could get paid for multitasking! I finished all of my holiday gifts for my family and they are in flat rate boxes from the USPS waiting for me to ship them tomorrow morning. I’m still waiting on some Butternut and Acorn Squash mini loafs to cool so no rush getting them off to my family- Gherardini, Forte, Iovino, Brelsford… and my oldest and dearest friend Roxanne who is anxiously awaiting some Yummy Yogini food!

 Christmas is finally in full swing at our house, sans the lights outside.. I’ll wait until I ship all my gifts and then get to work on that. But our tree, Mr. Fraser Fir, looks great and all of my Gram’s old ornaments (and my favorites) are adorning it! I love looking at them. They bring me back to a simpler place and time when there were seven crazy grandkids running around, tearing open presents and leaving wrapping paper in huge piles that looked like the leaves we raked that fall. My Grandpa would be in his chair, pants unbuttoned, stains on his shirt from present and previous Christmases, and resembling Santa he was so merry having all of us kids around.

We had a video camera back then- you know those huge ones you had to prop up on your shoulder to use- and it was my job (or so I made it) to take a Christmas video each year and then we would watch it at the end of the night. It was usually just me, in the bathroom mirror, talking about how much I loved Christmas and what I hoped Santa was bringing to me. Oh! And I believed in Santa until like fifth grade when my elementary school “friends” had to ruin it for me. Thanks a lot guys.

Here’s a little treat for the holiday season that’s simple to make and fun to eat. And there’s no baking involved so you can literally prepare this before a holiday party. I’d never made Peppermint Bark before but my friend Lori W. makes a scrumptious Halloween Bark with candy corns so I was inspired to try one too. The Peppermint Oreo’s seal the deal for me here… try not to eat all of them when you’re creating this!

Peppermint BARK! – makes one sheet tray

Ingredients:

-10 oz dark chocolate chips

-12 oz white chocolate chips

-1/2 box Peppermint Oreo’s

-1 box of Peppermint Candy Canes

Directions:

1. Layer a baking sheet with wax paper. Smash up the candy canes and put aside.

2. Place the Oreo’s in a food processor and blend until they are crumbs.

3. Melt the dark chocolate on your stovetop. (Or a microwave, I just don’t have one)

4. Layer the wax paper with the dark chocolate using a spoon to spread it out evenly.

5. Sprinkle the Oreo’s on top.

6. Place in your freezer for 10 minutes or until it sets.

7. Melt the white chocolate.

8. Spread the white chocolate over the Oreo crumbs.

9. Sprinkle the candy canes on top and put in the freezer for another 10 minutes or until set.

10. Enjoy the bark! Woof woof!
