I was a sucker for those Cabbage Patch dolls when I was kid. Even though they weren’t the prettiest or cutest dolls for that matter, I loved them anyway for their round washable faces, adoption papers, yarn ponytails, and tomboy overalls that matched my Oshkoshes! Those dolls are probably worth a fortune now on eBay and such… I wonder where all mine went?… probably a younger cousin or a yard sale I’m guessing. Too bad!

Back then, I really had no idea what cabbage even was. I’d only heard my Grandpa making fun of my ma for preparing her childhood boyfriend a cabbage sandwich, that she mistook for lettuce, and then made him eat it! My Grandpa loved telling that story and I can see why- they taste SO different! I have some growing in my winter garden as we speak in preparation for soups- not sandwiches- that I will be making in order to freeze for winter.

This here is my favorite CHEAPO cabbage soup. It takes less than an hour to make, less than $10 to create, it’s low in calories but high in fiber and is packed with nutritional value! You’ll need a big vat, or better yet a lobster pot for this one. Mine is vegetarian and very filling… I’m sure you won’t miss the meat! And, you don’t need chicken or vegetable broth to make this. It’s delicious on its own!

Cabbage Patch Barley Soup- makes half a lobster pot

You’ll need one of these big boys!

Ingredients:

-1 head cabbage

-1 bunch celery

-1 bunch carrots

-1 sweet potato

-1 white potato

-1 red onion

-2 Roma tomatoes

-1 can red kidney beans

-1 can white pinto beans

-1 small can diced green chilies

-1 cup barley

-2 bay leaves

-salt and pepper

-15 cups water

Directions:

1. Chop up the cabbage and veggies and place in a large pot.

2. Drain and rinse the beans and them and the chilies, to the pot.

3. Add the barley, salt, pepper and bay leaves.

4. Add 15 cups of water. (I don’t use vegetable or chicken broth.. too much salt)

5. Place a lid on top and bring soup to a boil. (usually takes about 25 minutes.)

5. Reduce heat and stir occasionally for another 25 minutes or until everything is soft.

6. Let cool before storing in freeze-able plastic containers. Enjoy without the guilt!
