If I was given a dollar for every time I was seen in the act of multitasking, I would be a flipping millionaire. I have been known to draw a bath while I make the bed, a cuppa tea and start laundry. While I read a chapter in my book I stretch in Pigeon Pose, while my freshly painted fingernails dry as I enjoy sipping on said cuppa tea, having just been made. While I prepare lunch or dinner, I listen to a Podcast or my “book on tape” and as things cook, I wash the dishes, (having no dishwasher even in this age) water the plants and I may even clean the glass table or maybe the bathroom sink. When I am on a role, I am a real mover and shaker!
When I saw this video about using your waffle iron to create small meals, “baked” goodies and even eggs, I thought what a great way to “cook” things while getting some other stuff done. Imagine not having to stand around to observe how your egg omelet is cooking because you are setting the table and making coffee! Or say you’re dying to have a quick snack and you put some brownie mix into your waffle iron and wallah! A soft yet crunchy, chocolate baked goodie for one! Yum!
I have a Waring Pro Waffle Iron thanks to my wedding registry and my Auntie Janet! Someone told me last week that you should have your wedding registry two years after you actually get married because then you know what you really need. It sounds so obvious and yet so untraditional at the same time. I love it! My pantry is home to some of the items I thought I could not live without (like an espresso maker) yet that I haven’t used more than three times (in some cases not at all) and that I will probably sell at a yard sale in the near future. Looking back, I should have registered for money! Hardy har har….! If you don’t have a fancy waffle iron already, hit up your nearest thrift shop because they are usually easy to come by and cheap too.
My three girlfriends Summer, Jennifer and Lynn came over on Sunday for a girl’s brunch, also known as a bitch fest/ mimosa saturated debauchery complete with Coconut Waffles, Eggs Benedict, and a Quinoa Tabouli Salad all made by yours truly! We ate on the floor yogi style and while we brunched, my hips got a good stretch.. multitasking at its finest again! I thought I’d put the “Waffle Iron Baking” challenge to the test with a veggie omelet and what do you know, it actually worked! This is one of the easiest ways to make eggs, I promise! I also tried this again later with some chocolate cherry brownie mix but the mimosas had already set in and I forgot to snap a picture of the delicious treat!

Waffle Iron Omelet- serves one
Ingredients:
-2 eggs, beaten
-onions
-parsley
-non-stick spray or coconut oil
Directions:
1. Beat the eggs and add your veggies in. Use anything you want, this is what I had, so this is what I used.
2. Spray your waffle iron or coat it with some coconut oil like I did.
3. Spread your egg mixture over the iron and make sure to get all the corners.
4. Set for 3-4 minutes and return when you hear the “BEEP”!
5. Using a fork, peel the omelet off the iron.
6. Garnish with your favorite condiment and enjoy!
Ummmmm where do I RSVP for the next brunch? Lol. I have a cast iron (like heirloom waffle iron) I’ll try this out this weekend and see how it all shakes out! Looks scrumptious! Plus I think the kiddies would enjoy the fun shape.

LOVE IT…….:) One problem , my waffle iron is somewhere in a box in our garage, along with other wonderful appliances (juicer,crock pot etc) since we down sized moving hear, after living in the Desert(for NINE LONG , OCEANLIST YEARS) we down sized quite a bit, from 3,000 sq feet to 1,300…YIKES…lol (houses are REALLY BIG down there!!) anyways off to the garage to dig up some treasured appliances.
