Since it’s Cyber Monday, I thought I’d add to the many emails you’ve probably been getting all day long and send out a post! I’ve received countless offers from Groupon, Barnes and Noble, eBay, Amazon and the list goes on. Oddly enough, I’m not doing any shopping today, I’m cooking instead. As if I didn’t cook enough this past week I’m putting my leftovers to good use and making Turkey Pot Pies that I can freeze now and pull out later. I’m so over all of my Thanksgiving leftovers that they’ll probably be in there for awhile… it’s Christmas cookie time… right?!
I spent all Thanksgiving day cooking for my two friends Lynn and Jennifer while we watched the Macy’s TG Day Parade followed by the National Dog Show. It was a wonderful day with lots of champagne and I got to bed early, which is always a plus after a day spent overeating. Cooking is so meditative for me and it took my mind off the letter I received from my landlords the day before the holiday… telling me I have to vacate by January 31st because they are moving back in. Happy Holidays huh?! So this next month I’ll be on a quest to find a newer and more amazing love shack for us to move into… not what one hopes to be doing during the holiday season but I’m lucky to have a place to live for the time being and I’m thankful for that. So… if you live in the 5 Cities or Nipomo area and you see a rental, let me know please! Until then here’s that yummy pot pie recipe!

Turkey Pot Pies- makes 2 to 4 pies depending on how much you have leftover!
Ingredients: These are my leftovers but use what you have!
-2 to 4 frozen pie shells
-leftover turkey, chopped into small pieces
-leftover green bean casserole
-leftover butternut squash
-1 8oz. package of peas, thawed
-leftover stuffing
-leftover mashed potato
-leftover gravy
-phyllo dough for lattice (optional)
-1 beaten egg (for top of pie)
Directions:
1. Preheat the oven to 375.
2. Chop all up the vegetables and turkey and add them to a large bowl. Mix well.
3. Pour the mixture into 2-4 pie shells.
4. Then heat up your gravy and pour on top, covering most of the mixture.
5. For a lattice crust, cut strips and layer or just take the other frozen crust and place it on top, cinching the sides.
6. Place in the oven for 60 minutes or until the crust begins to brown.
7. Let cool for at least 10 minutes before serving…. Gobble Gobble!

Before I go, let me recommend to you two fabulous books I just finished reading. If you dig novels about utopian societies, then you’ll love The Handmaid’s Tale by Margaret Atwood. The story is set in the near future and is a work of speculative fiction, which I love. I don’t want to give too much away, but after a totalitarian Christian theocracy has overthrown the US government, most women are left infertile and have to find handmaid’s that are willing to become impregnated for them. It’s a novel that explore the roles of women and the degree to which some women (and men) will go to procreate.
Also, if you grew up in the 1950s, you must read Bill Bryson’s The Life and Times of the Thunderbolt Kid. It’s a hilarious memoir and account of life in the 50s, growing up in Iowa and how imaginative you can be when the world as you know it is boring and lacks luster. This is a great audio book and I just LOVED Bryson’s voice and the way he speaks!
