Happy March Fourth… it’s the only date that’s also a sentence! Haha! I am so glad it’s March now… February was the loooongest month of my life and it had nothing to do with leap year! Did I mention I just moved to a new house too?! I’m happy to say my husband Andy is feeling and moving much better and he’s been back to work for a couple of weeks now too. His strength truly amazes me… just a few short weeks ago he was lying in a hospital bed and we had no idea when things would be back to normal and now he’s back sporting his white chef coat and making me delicious meals again… thank gosh! We’re “marching fourth” if you will…back into reality!
Andy’s jaw is so much better now but I’m addicted to all the juices and ice creams that we’ve been eating the past month. I never knew how much I like fresh juice! Only in India did I indulge in fresh juices and coconuts every morning and I know why… the juicer is a pain in the ass to clean. The pulp! The mess! The clogging of my drain from all the pulp! So I’ve been making them in bulk and storing them in the refrigerator to drink when I don’t have the time to clean up after myself. Which is often these days! Did I mention our new house has a huge avocado tree? I’ve been using avocados in everything since they’re easy for Andy to eat and last night I created an ice cream recipe using avocados. I know! “Avocado idea cream? Is it good?” is what you’re probably asking and I promise it was and is. There are only five ingredients in this recipe and there is ZERO sugar so you will have ZERO guilt about indulging in this frozen treat. The second recipe is one of my favorite ways to enjoy avocados for breakfast. It’s an easy peasy one too!
Avocado Ice Cream- serves two or more
Ingredients:
-4 small ripe avocados
-3 frozen bananas
-1/2 cup milk (I used Vanilla Almond Milk)
-sprig of mint
-chocolate chips (optional)
Directions:
1. If you’re using frozen bananas, toss them in the oven for a few minutes so they soften up just a bit.
2. Grab your blender and add all the ingredients in together. Blend until smooth.
3. Add some chips or chop up a small chocolate bar like I did.
4. Place your ice cream in the freezer for at least 30 minutes or until it begins to harden and doesn’t have the consistency of a smoothie anymore! Enjoy!

Avocado Baked with Eggs- serves one or two
Ingredients:
-1 avocado, sliced length wise
-2 eggs
-cilantro
-hot sauce
-salt and pepper
Directions:
1. Preheat the oven to 425.
2. Slice your avocado, remove the pit and place on a sheet tray with some foil. Scoop out some of the avocado if it looks too small for an egg to fit in there.
3. Crack an egg in each half and place in the oven for 15-20 minutes, depending on how you like your eggs. I baked mine for 20 minutes and they came out over medium.
4. Season as desired and enjoy!

Let’s talk about books now shall we? I feel like it’s been forever since I told you what I’m reading and vice versa. Having just finished Harper Lee’s To Kill A Mockingbird, I’m onto Go Set A Watchman. There is so much debate abut this book that I’m excited to read it and decide for myself if I like it or not. I want to hear your opinion so please comment below if you’ve read it. This was the first time I read Mockingbird; it wasn’t required reading when I was in high school and I really enjoyed the story and especially the characters. Jem and Scout were so full of energy, questions and plans that I’m curious to see how they turned out 26 years later, as the new book picks up from then. We shall see….
