Happy September to you! As usual summer managed to wiz right by and just like that we’re falling into autumn. I love a new month and a new season as it’s a great time to change your goals, intentions and mindset. I enjoy revisiting my vision board that I create at the beginning of each year, checking off things I’ve done and things I’ve yet to do. And sometimes I’ll add to it as new months signify fresh beginnings for me and a great time to change my routine or to try something new. Speaking of which, I have a ton of workshops and new classes starting this month, and most of them are FREE to attend! You know what I say, the best yoga is free yoga by far!

Today this post is just about me, me and me! Self promotion never hurt right?! First off, I’m super excited to announce that I’ll be teaching FREE yoga at lululemon athletica in SLO every Sunday during the month of September. The class is from 10:30-11:30 a.m. and takes place outside in a zen-style garden with a fountain and a lemon tree too. It’s a beautiful backyard space and the warmth of the sun makes it a fun and sweaty practice. All you have to do is BYOMat and you’re good to go!
Secondly, mark your calendars because I’m teaching another Vino and Vinyasa class on Friday, October 2 from 4-5 p.m. The class will once again be at Baileyana Vineyard in Edna Valley and there will be food trucks, live music, and a trunk show from lululemon too! The last class (and the first) had an attendance of 45 people!!! I’m hoping to double that this time around so tell your friends!
And if you didn’t already know, I’m teaching a Chair Yoga workshop at SLO Yoga Center on Saturday, September 19 from 1-2:30 p.m. If you know little about chair yoga, don’t stress, because you literally don’t have to leave your chair! Chair Yoga is a gentle form of yoga practiced sitting on a chair or standing using the chair for support. This class is perfect for every BODY and is a great way to relax head to toe. Students will enjoy the benefits of yoga in a safe and gentle environment and I’ll incorporate breathing and meditation exercises as well. Get more info here!
Okay so lastly, I want to invite you all to come take my new Cardio Kickboxing class at Club Cardio in Grover Beach! I am in love with teaching this format and it’s a great way to get out aggression while you have fun, sweat, build muscle and change your body! I’m teaching every Wednesday and Friday from 9:15-10:15 a.m. and beginners are always welcome! Here’s a little preview of what to expect… just another way to get your ass kicked by me! Off the mat and onto the bag! Come get yoked!

Speaking of getting yoked, my girlfriends and I got together over the weekend for Mimosas and Muffins, featuring blueberry muffins and “Egg McMuffins” cooked in a muffin tin. Now that I’m busier than ever, these are my go to when I’m rushing and don’t really have time to stop and eat breakfast. I love making these ahead of time and then freezing them. When I want one, I pop it out of the tin, heat it up in my toaster oven, and then I’m off! This is an easy peesy recipe and your kids are sure to like it too!

Egg Breakfast Bites in Muffin Tins: makes 4 bites
Ingredients:
-4 eggs, scrambled
-1/4 cup unsweetened Vanilla Almond Milk
-handful of spinach
-cheery tomatoes
-handful of herbs (I used parsley and cilantro)
-1/2 zucchini
-1 jalapeño pepper
-scallions
-Coconut oil (for greasing down muffin tins)
-cheese for sprinkling on top (I used Asiago)
-salt and pepper
Directions:
1. Preheat the oven to 350.
2. Chop up all your veggies. Give them a two minute sauté in a pan with a little coconut oil. The eggs cook faster this way.
3. Scramble the eggs with the Vanilla Almond Milk.
4. Grease the muffin tins. Then grease them again. This will insure the breakfast bites don’t stick to the tin!
5. Scoop the veggies into the tins and pour the scrambled eggs on top. I only used 4 tins since there are only two of us. Make this recipe bigger if you need to serve more people.
6. Grate a tiny bit of cheese on each one and pop into the oven for 20 minutes or until the eggs are cooked.
7. They will have a tiny bit of water on top when they are through cooking and brown on the sides. Use a butter knife to scoop them.
8. Serve with a bit of hot sauce and wallah! Clean eating! And they’re cute!

My hubby and I celebrated our fourth wedding anniversary yesterday in true Nelson style with champagne, an impromptu picnic and a game of Dominoes. I love this man more every year and he is my biggest supporter, fan and best friend. There is no one in this world I’d rather spend my time with and he is most definitely my BEST half!
